Mama Jacq's Sweet and Spicy Hot Wings

This hot wings recipe from Mama Jacq's uses their delicious Scotch Bonnet Hot Sauce. They recommend 1 or 2 tbsp of hot sauce per 1.1kg of wings but we say don't be shy! The longer you can marinade the chicken for the better.


1.1 kg of chicken wings
3/4 cup of butter
1 cup of honey
1 pinch of salt
1 pinch of ground black pepper
1 tsp of cayenne pepper
1 tbsp of Mama Jacq's Scotch Bonnet Hot Sauce or 2 tbsp to add more heat

Step 1

Add butter, honey, salt, ground black pepper, cayenne pepper and Mama Jacq's Scotch Bonnet Hot Sauce into a small saucepan on medium heat. After sauce reaches a boil, allow to cool.

Step 2

Place wings into a bowl. Pour some of the sauce mixture into the bowl but keep some back to base your wings whilst they cook. Using clean hands mix until wings are evenly coated. (Optional) Place wings in the refrigerator and allow to marinade for at least 1 hour.

Step 3

Tear enough parchment paper to cover large pan if using an oven. You will not have to do this if using a grill. Whilst the wings cook repeatedly base them using the sauce.

Step 4

Within 30 to 45 minutes your wings should be ready to plate and eat.
