Dried chillies are easy to store and will last for over a year providing you with an economical way to have a variety of chillies to hand.
To use dried chillies rehydrate them in a bowl of freshly boiled water and leave for 20 to 30 minutes. For additional flavour you can toast them in a dry pan on each side for 30 seconds or so before rehydrating. Remove the seeds if you wish to reduce the heat level.
