Merida on the Yucatan Peninsular,  MexicoEl Yucateco hot sauces are manufactured in Mexico by El Yucateco Salsas y Condimentos, a world leader in the manufacture and export of sauces, condiments and concentrates. The company is based in Merida which is the capital of the State of Yucatan on the Yucatan Peninsula, bordering the Gulf of Mexico.

The company was founded in 1968 as a family business by Mr. Priamo J. Gamboa. Commitment to the quality of the ingredients and care in preparation of the products have seen the company grow to its present state, growing their own fields of Habanero and Achiote peppers and processing in a modern manufacturing and packing facility.

The company produce four well know varieties of hot sauce and are unique, in as far as I know, in producing a green sauce that is hotter than their red sauce.

The Yucatan is exactly the region of Central America that many researchers believe to be the origin of the chili plant and recent evidence is suggesting that it may have been cultivated as far back as 6000 BC. El Yucateco are thankfully maintaining the history of the area by providing us with their excellent range of products.

The Yucatan area, although part of Mexico, benefits from a rich Mayan heritage that influences its food and culture. The food is influenced not only by traditional Mexican cuisine but mixes the local Mayan culture, the Caribbean, European and even Middle Eastern to create unique dishes such as Cochinita pibil (slow-roasted pork). The language is quite distinct to the area, based on Spanish but with many Mayan words and influences that are said to produce a softer Spanish than that spoken in other areas of Mexico.
