Dave Hirschkop of Dave's Gourmet is the man who created the super hot sauce in the early 90's and has the honour of being the only man to have a sauce banned from the National Fiery Foods show in Albuquerque, New Mexico - his Insanity Sauce was, just TOO Insane for the judges! So started a range of Insanity sauces that is now known worldwide.

On leaving college Dave started a restaurant called Burrito Madness near the University of Maryland. He soon found that owning a restaurant was a difficult life and to get rid of the drunks who'd often challenge him to produce a hotter burrito would lace their dish with his super hot sauce, they soon left. Soon Dave was making hotter and hotter sauces to please his customers, his trick was to add the industrial flavour enhancer, oleoresin capsicum.

The original Dave's Insanity Sauce is still being produced and is still as fearsomely hot as ever but for those of you who think it still not hot enough then Dave has given us his Dave's Ultimate Insanity Sauce. Both are truly amazing and a part of hot sauce history.
Dave makes it a policy not to reveal the Scoville Unit measure of any of his sauces, he doesn't believe that the measure can sum-up the experience of actually tasting it - an experience that everyone should try at least once in their lives!

Dave himself is quite a character and would, probably still will, do anything to promote his line of sauces. He'd regularly appear at food shows in a straight-jacket to demonstrate the insane nature of his sauces. Just a few of the dozens of awards that Dave's picked-up are listed below

Every year Dave makes a Private Reserve sauce for the Insanity range. The sauce is produced with only the hottest of the hottest peppers and of course has extract added to make the most insane of sauces. 2009 is the sixteenth year of production and Dave has not disappointed with this limited edition sauce; it's hand signed by Dave, numbered, vintage dated and laid to rest in a wooden coffin wrapped in caution tape. Dave claims that this is his hottest reserve yet - the packaging really says it all.
