Smoked Cajun Meatballs

| A Cajun spice mix is guaranteed to get the mouth watering, add a bit of smokey and all of a sudden the bandit comes out. Great tasting meatballs and simple to prepare! |

| Meatballs: |
| 500g. Minced Beef or Pork |
| 1 Onion, finely chopped |
| 60 g. Breadcrumbs |
| 1 ½ teaspoon Dunn's River Smoked Cajun Seasoning |
| Flour, to dust |
| Oil, for frying |
| Sauce: |
| 2 tablespoons Oil |
| 1 Onion, finely chopped |
| 3 Celery Sticks, chopped |
| 1 Red Pepper, de-seeded and chopped |
| 1 Green Pepper, de-seeded and chopped |
| 400 g. can chopped tomatoes |
| 1 teaspoon Dunn's River Smoked Cajun Seasoning |

| Mix together the mince, onion, bread-crumbs and Dunn's River Smoked Cajun Seasoning. Divide and form into 24 meat-balls. Roll in flour and set aside. |

| To make the sauce: heat the oil, add the onion, celery and peppers and cook until softened. Add the tomatoes and Dunn's River Smoked Cajun Seasoning. Simmer for 15 minutes. Heat the oil in a frying pan and fry the meatballs until brown on all sides. Remove from the pan and add to the sauce. Simmer gently for 20 minutes then serve with rice. |
