Smoked Cajun Meatballs

A Cajun spice mix is guaranteed to get the mouth watering, add a bit of smokey and all of a sudden the bandit comes out. Great tasting meatballs and simple to prepare!
 
Serves 6
 
Preparation Time: 20 minutes
Cooking Time: 60 minutes
 
Meatballs: 
500g. Minced Beef or Pork 
1 Onion, finely chopped 
60 g. Breadcrumbs 
1 ½ teaspoon Dunn's River Smoked Cajun Seasoning 
Flour, to dust 
Oil, for frying 
Sauce: 
2 tablespoons Oil 
1 Onion, finely chopped 
3 Celery Sticks, chopped 
1 Red Pepper, de-seeded and chopped 
1 Green Pepper, de-seeded and chopped 
400 g. can chopped tomatoes 
1 teaspoon Dunn's River Smoked Cajun Seasoning 
 
Mix together the mince, onion, bread-crumbs and Dunn's River Smoked Cajun Seasoning. Divide and form into 24 meat-balls. Roll in flour and set aside.
 
To make the sauce: heat the oil, add the onion, celery and peppers and cook until softened. Add the tomatoes and Dunn's River Smoked Cajun Seasoning. Simmer for 15 minutes. Heat the oil in a frying pan and fry the meatballs until brown on all sides. Remove from the pan and add to the sauce. Simmer gently for 20 minutes then serve with rice.
